A recent press release stated "Snappy also supports AES 128-bit encryption for secure applications". When will documentation be available or demonstration scripts become available to showcase this feature? Will it be in the upcoming 2.1 release?

Yes, AES 128 will be apart of our 2.1 release.

As far as an example script, there is not really a way to demonstrate this feature as it will be transparent to your code. As it currently is implemented in development, the feature will be configured using two NV parameters. The first parameter is a boolean to enable or disable the feature and the second is the AES 128 key.
